Turmeric Bell Pepper Dip. Absolutely amazing burst of juicy flavor. Turmeric, Ginger and Garlic Chicken Alfredo.
Turmeric is supposed to be really good for killing cancer cells, so I looked up some recipes for it. I wanted to find something simple enough to make and store while we were on the road. This main recipe (bell pepper dip) is perfect and it tastes great, too! I found it here: Yummy Vegetable Dip - http://allrecipes.com/Recipe/Yummy-Vegetable-Dip/Detail.aspx#nutri-box. I experimented a little, first leaving out the sugar. Wanda loved it, but I thought it was too salty. I added in about three more teaspoons of horseradish. I liked that better (a lot), but Wanda didn't. I changed the ingredients up more and came up with this final recipe:
1 cup mayonnaise
2 teaspoons ground turmeric
1/2 teaspoon garlic salt
2 garlic cloves - crushed
2 teaspoons dried minced onion
2 teaspoons prepared horseradish (or to taste)
1 teaspoon white vinegar
Chill before serving. Keep refrigerated.
Wanda and I both liked this one. On its own, you can't really appreciate the flavor, but it is absolutely amazing with slices of raw yellow, orange, and red bell peppers. I couldn't stop eating it until the last bell pepper was gone! I tried it with carrots and celery--it's okay, but you don't get that same burst of juicy flavor. I haven't tried it with green bell peppers yet, so I don't know about them.
This next one is not really a recipe. It's just something I tried and it turned out pretty good, so I thought I would include it.
Lightly saute very thin strips of chicken breasts in olive oil. Sprinkle with turmeric, sprinkle with ginger, add two cloves of crushed garlic. When chicken is cooked through (won't take long), add alfredo sauce to taste.
This was really good, but I was just experimenting, so I don't know how much of the turmeric and ginger I used. The turmeric will turn everything yellow.
